Oysters with hot ice


  • 500g caster sugar
  • 3 limes, zested and juiced
  • 2½ grapefruit, juiced
  • 2 jalapeno chillies or 2 fat green chillies, finely chopped
  • 100ml tequila
  • 12 oysters


  1. Gradually dissolve the sugar in 500ml water over a low heat. Add the lime juice and zest, grapefruit juice, chillies and tequila. Pour into a container and freeze.
  2. Every 30 minutes, rough up with a fork to form crystals until you have a frozen mixture. Serve on freshly shucked oysters.
