Dennis became the head chef of the celebrated Chop House Restaurant in 2011; since then he has reworked and improved their delicious Irish menus in order to create something new which is at the forefront of modern cuisine. Dennis concentrates on sourcing the best Irish meat possible and the finest in other seasonal produce. Dennis previously worked at a selection of acclaimed and award-winning Dublin restaurants, including L’Ecrivain and Patrick Guilbaud. The head chef Dennis and the owner of the restaurant Kevin Arundel are both Michelin-starred chefs, and they have adapted their skills to suit the friendlier and more informal atmosphere in the Chop House.
