Paul Ninan is the head chef that is responsible for a superbly authentic Indian menu, and he hails from India himself. Having trained and worked extensively in some of the top restaurants in India, Paul’s innovative Indian creations are a unique treat for the customers of Vermilion. He has been a central part of the team at Vermilion since it opened in 2001.
