Max was born and bred in Sardinia, Italy, and he brings over twenty years of experience to this role. He has worked in many of the top restaurants in Europe, including the famous Cala Di Volpe Hotel and the Michelin Star Sandira Restaurant. Max spent a year working in England in the industry before making the move to Ireland in 1995. He initially worked in the Clarence Hotel alongside the acclaimed head chef Michael Martin. He has a passion for blending European, Japanese and Mediterranean flavours; the menu in Wrights is testament to this fusion style.
