Taweesak Trakoolwattana is the executive head chef at the award-winning Saba restaurant which is ideally positioned on Clarendon Street, in the centre of Dublin 2, and he has held this position since 2006. Trakoolwattana or Tao brings extensive experience and a distinctive passion for traditional Thai and Vietnamese cuisine to Dublin on a daily basis.
All fresh meat and seafood is sourced locally in Ireland and the more unusual but invaluable Thai herbs, vegetables and fruit arrive over from the homeland on a weekly basis to ensure that the menu is an authentic one. Tao trained at the Hotel and Tourism Training Institute and his wide range of experience includes a past position as head chef in Diep le Shaker and in Winzerhaus in Zurich.
