Specialised Cuisine

Signature Dish
My favourite dish is Teriyaki beef, vegetable black bean sauce, and steamed fish with ginger and spring onion or lemon dressing.

Vital Ingredient
Vital ingredients are fresh seafood and meat. Experience and sense are essential too!

Guilty Pleasure
If I feel the dish is not perfect, I will not give it to a customer. Every single dish is like art for me.

Favourite Wine
I like red wine, particularly fleurie

Favourite dish to cook at home
My favourite food to cook at home is stir fried lobster with ginger and spring onion, and roast duck as a main course.

Main Inspiration
The biggest inspiration as a chef is to see my customers enjoying my cooking
