Pol and his brother Paraic are the minds behind Bloom Brasserie and Wine Bar which is located on Baggot Street. Pol is at the helm of the kitchen and has over 15 years experience both in Ireland and abroad. He is passionate about food, and he only uses the freshest seasonal and locally sourced produce in his restaurant. He can’t emphasise how important simple garnishes like salt, pepper and good quality olive oil are.
