Ingredients

  •  
  • 100g/4oz filo pastry, cut into 10cm x 10cm (4in x 4in) squares
  •     25g/1oz butter, melted
  •     groundnut oil, for frying
  •     chocolate or caramel sauce

Method

  1. 1. The day before you wish to serve the deep-fried ice-cream, scoopballs of ice-cream onto a baking tray and place in the freezer.
  2. 2.The next day, brush the melted butter over one square of filo and topwith a second square. Brush the sides of the second square with butterbefore placing one ball of ice-cream inside. Carefully draw the sidesof the filo up to form a little parcel. Return to the freezer.
  3. 3.Preheat the oil in a deep-fat fryer or wok (CAUTION: Hot oil is verydangerous. Do not leave unattended). Remove the parcels from thefreezer and drop into the hot oil. Fry for 30 seconds, then carefullyremove using a slotted spoon. Pat with a piece of kitchen towel andserve.
