Spicy christmas biscuits

Homemade biscuits smell and taste wonderful, especially at Christmas time. This is an easy recipe that the kids will enjoy helping you with...if you want to make a bigger batch then just double the mixture!

Ingredients

  • 225g/8oz plain flour
  • 175g/6oz margarine
  • 1 teaspoon cinnamon
  • Half teaspoon grated nutmeg
  • 60g/2oz castor sugar
  • Little extra caster or icing sugar for dusting

Method

  1. Heat oven to 180C/gas mark 4
  2. Weigh flour and sieve onto a plate
  3. Weigh margarine and sugar and place in a large mixing bowl
  4. Add cinnamon and nutmeg and beat together until smooth and creamy
  5. Add sieved flour, one tablespoonful at a time until all ingredients are mixed together.  Use your hands (washed in warm soapy water) to make the dough into a ball
  6. Place the ball of dough on a floured workshop and flatten slightly.  Roll out to 1cm thick
  7. Cut into shapes with cookie cutters, if you don't have these then just use a glass or a mug
  8. Place the cookie on a greased baking tray and bake for 10 - 15minutes until a pale golden
  9. Remove from baking tray onto a cooling rack and sprinkle with a little more castor sugar.  Cool completely and store in an airtight tin.
