Stuffed squid in red wine

Ingredients
- 6 squid, with a sac of 15-20cm
- 4 tbsp olive oil
- 2 garlic cloves, finely chopped
- 2 tbsp parsley, chopped
- 2 red peppers, roasted and cut in to 1cm strips
- 1 small red chilli
- 100g ripe tomatoes, as pulp
- 12 prawns
- 20g fine dry breadcrumbs
- 1 egg
- 170g onions, very finely sliced
- 100ml red wine
Method
- 1. Clean the squid and chop the fins and tentacles. Sautee the garlic in the oil, add the parsley and squid pieces and cook for two minutes. Add the tomatoes, chilli and season. Simmer with the lid off for 30 minutes until dryish.
- 2. Cool and then mix through the egg and breadcrumbs. Stuff the sacs with a couple of strips of pepper, two prawns and the mixture. Do not overfill. Seal with cocktail sticks and reserve.
- 3. Sautee the onions, and when softened, raise the heat and brown the squid. Add the wine and tightly cover. Braise for 45 minutes, adding a little water if necessary. Slice and serve.
