Warm or cold couscous salad
I found this brilliant recipe for couscous a few weeks ago and fell in love with it because it can be served as a warm dinner or chilled as a salad. How handy is that?

Ingredients
- 1 onion
- 1 clove of garlic
- 1 aubergine
- 1 fresh chopped red chilli (I used half of a small one – the smaller thestronger!)
- 1 red bell pepper
- 300ml wholewheat couscous
- 300ml stock (I used a Kallo Organic French Onion stock cube)
- 1 tin of drained
- A handful of green olives
- Lemon
