Warm or cold couscous salad

I found this brilliant recipe for couscous a few weeks ago and fell in love with it because it can be served as a warm dinner or chilled as a salad. How handy is that?

Ingredients

  • 1 onion
  • 1 clove of garlic
  • 1 aubergine
  • 1 fresh chopped red chilli (I used half of a small one – the smaller thestronger!)
  • 1 red bell pepper
  • 300ml wholewheat couscous
  • 300ml stock (I used a Kallo Organic French Onion stock cube)
  • 1 tin of drained
  • A handful of green olives
  • Lemon
