Ingredients
- • 100 g Philadelphia Light with Basil
- • 12 pancetta, slices
Method
- Pre-heat the oven to 200oC, gas mark 6. Place the chicken on a board breast side down. Open out the fillet and spread a quarter of the Philly over each piece. Fold the Fillet back over and wrap with the pancetta slices.Pop into a non-stick baking dish and roast in the oven for 25 - 30 minutes or until the pancetta is golden and the chicken is cooked through.Serve simply with fresh seasonal vegetables. • Smoked streaky bacon can be used instead of pancetta.
