- 1 lb fruit
- 1/2 lb brown sugar
- 2 cups of cold tea
- 1 tsp each cinnamon and mixed spice
- 1 egg
- 1 lb flour
- 2 level tsps baking powder
- Soak fruit and sugar overnight in cold tea.
- Add spices (overnight is fine)
- Add in beaten egg, flour and baking powder.
- Divide between two loaf tins.
- Bake at 165 for about 1 hour.
- Test with skewer.
