Ingredients

  • 1kg piece of back bacon with fat on but no skin
  • cloves

Method

  1. Boil the bacon for approx 1 hour 20 minutes
  2. Put bacon into ovenproof dish - snug fit
  3. Add the cider. Cut criss cross in the bacon fat
  4. Sprinkle the brown sugar over the fat. Stick cloves in a diamond pattern
  5. Bake in the oven for about 20 minutes at 180 degrees
  6. Slice and eat with roast potatoes and veg. YUMMY!!!

Why not make up a large quantity of this marinade in advance – it is wonderful with cutlets and would also work well with leg steaks or loin chops. The longer you marinate the meat for, the better the flavour!
