Ingredients

  • 1/2 pint(300)mls fresh milk,not skim milk.(WARMED BUT NOT HOT)
  • 1 cup sugar
  • 1 plain junket tablet.(DISSOLVED IN A LITTLE COLD WATER) (Junket is now sold in 15 gram powder form (1/4 teaspoon is 1 tablet)
  • 2 teaspoons gelatine, dissolved in 3 tablespoons HOT water,then COOLED before adding to mixture.
  • 1 teaspoon vanilla essence

Method

  1. Beat tin of chilled milk until very thick and fluffy.
  2. Add sugar, vanilla and cooled runny gelatine miixture, beat until thick.
  3. Add dissolved junket tablet to warmed fresh milk and mix gently to rest of mixture.
  4. Pour into chilled freezer trays and freeze until set at least 1/2 to 1inch around the sides of trays.
  5. Take out and turn into bowl and beat again until thick.
  6. Return to trays and freeze until firm, will takes several hours.
