Bacon and Cabbage Boxty
Ingredients
- 4 large floury raw potatoes(roosters)
- 1 tsp salt
- Leftover bacon and cabbage(savoy)
- Olive oil
- Butter
Method
- Grate the raw potatoes in processor, mix in salt and milk then stir in flour.
- Chop the bacon and cabbage roughly in the processor and stir into mixture.
- Heat oil on non-stick pan. Pour mixture onto pan evening out the top with a spoon.
- Cook until golden on both sides.
- Spread butter on top before serving. You can serve this on its own or, as a smaller cake underneath meat/fish. It goes particularly well with pan fried fresh cod.
