Bacon and Cabbage Boxty




Ingredients

  • 4 large floury raw potatoes(roosters)
  • 1 tsp salt
  • Leftover bacon and cabbage(savoy)
  • Olive oil
  • Butter

Method

  1. Grate the raw potatoes in processor, mix in salt and milk then stir in flour.
  2. Chop the bacon and cabbage roughly in the processor and stir into mixture.
  3. Heat oil on non-stick pan. Pour mixture onto pan evening out the top with a spoon.
  4. Cook until golden on both sides.
  5. Spread butter on top before serving. You can serve this on its own or, as a smaller cake underneath meat/fish. It goes particularly well with pan fried fresh cod.
