Beef Rendang - Indonesian




Ingredients

  • 1kg diced beef
  • 2 teasp. root ginger
  • 1 red chilli
  • Olive oil
  • 1 large onion
  • 250ml water
  • juice of 1 lemon
  • 2 teasp. turmeric
  • 3 tablesp soy sauce
  • 1 tablesp. brown sugar
  • 1 bay leaf
  •  A little salt
  • 100ml coconut cream

Method

  1. Put garlic, ginger and chilli into a food processor and grind.
  2. Heat oil in a deep frying pan.
  3. Cook onion and the garlic, ginger and chilli for a few minutes.
  4. Add the beef plus water, lemon juice, turmeric, soy sauce, brown sugar, bay leaf, salt and pepper.
  5. Keep over a gently heat until tender - a little over an hour.
  6. Towards the end add some coconut cream.
