Beef Rendang - Indonesian
Ingredients
- 1kg diced beef
- 2 teasp. root ginger
- 1 red chilli
- Olive oil
- 1 large onion
- 250ml water
- juice of 1 lemon
- 2 teasp. turmeric
- 3 tablesp soy sauce
- 1 tablesp. brown sugar
- 1 bay leaf
- A little salt
- 100ml coconut cream
Method
- Put garlic, ginger and chilli into a food processor and grind.
- Heat oil in a deep frying pan.
- Cook onion and the garlic, ginger and chilli for a few minutes.
- Add the beef plus water, lemon juice, turmeric, soy sauce, brown sugar, bay leaf, salt and pepper.
- Keep over a gently heat until tender - a little over an hour.
- Towards the end add some coconut cream.
