Quick and Tasty Fruit Brioche
Ingredients
- 2 eggs
- 1 cup sugar
- 2 tubs Mascarpone
- Fruit of choice
- 1 sliced Brioche pan
Method
- Grease a 9" (loose-base) tin.
- Remove crusts from brioche and line the base, cutting to shape where necessary.
- Beat eggs and sugar until stiff.
- Add Mascarpone, and fold in thoroughly.
- Pour over the base.
- Arrange fruit of choice - for instance: sliced peaches / mandarin oranges / strawberries
- Bake in a moderate oven for 25-30 mins (325F/165C/Gas Mark 3)
- Leave in the tin to cool and set
