Quick and Tasty Fruit Brioche




Ingredients

  • 2 eggs
  • 1 cup sugar
  • 2 tubs Mascarpone
  • Fruit of choice
  • 1 sliced Brioche pan

Method

  1. Grease a 9" (loose-base) tin.
  2. Remove crusts from brioche and line the base, cutting to shape where necessary.
  3. Beat eggs and sugar until stiff.
  4. Add Mascarpone, and fold in thoroughly.
  5. Pour over the base.
  6. Arrange fruit of choice - for instance: sliced peaches / mandarin oranges / strawberries
  7. Bake in a moderate oven for 25-30 mins (325F/165C/Gas Mark 3)
  8. Leave in the tin to cool and set

Why not make up a large quantity of this marinade in advance – it is wonderful with cutlets and would also work well with leg steaks or loin chops. The longer you marinate the meat for, the better the flavour!
