Ingredients
- For the base:
- 6 lettuce leaves, chopped
- 3 cabbage leaves, chopped
- 2 small radishes, minced
- 200 g cucumber, diced
- 1 red bell pepper, minced
- 1 carrot, shredded
- 40 g sweet corn kernels
- 1 large tomato, finely diced
- 1 small onion, sliced thin
- 10 g garlic, crushed
- 12 sprigs parsley, minced
- 12 mint leaves, minced
- 60 ml olive oil
- 60 g pomegranate seeds (optional)
- 60 ml pomegranate syrup (optional)
- 30 ml fresh lemon juice
Method
- Toss together the lettuce, cabbage, radish, cucumber, red bell pepper, carrot, corn, tomato, onion, garlic, parsley, mint, olive oil, pomegranate seeds, pomegranate syrup, and lemon juice in a large bowl.
