Ingredients

  • • Pinch salt
  • • Pinch freshly ground black pepper
  • • 150 g baby spinach, coarsely chopped
  • • 15 g pesto
  • • 2 g chopped dry-packed half sun-dried tomatoes
  • • 4 g pine nuts

Method

  1. Make a slit two-thirds of the way through the centre of each salmon fillet making sure not to cut all the way through.
  2. Season each fillet with the salt and pepper.
  3. In a bowl, combine the spinach, pesto, tomatoes, and pine nuts. Spoon 1/3 cup of the mixture into each slit.
  4. Arrange the fillets on a buttered metal cooking dish.
  5. Roast for 8 to 10 minutes.
  6. Serve with new potatoes and a green salad
