Ingredients

  • 1 Tin John West Wild Salmon, Minus Skin, Bones, Etc
  • Breadcrumbs From 1 Slice Bread
  • 1 Lemongrass Stalk,
  • Inner 1 Red Chilli
  • 1” Piece Fresh Ginger
  • 1 Scallion
  • 6 Coriander Stalks
  • 1 Level Teaspoon Red Curry Paste
  • 1 Teaspoon Nam Pla (Fish Sauce) Use Light Soy As Substitute
  • 1 Teaspoon Mirin Or Sherry (Use Tsp Sugar As Substitute)
  • 1 Egg Small Bunch Coriander Leaves, Finely Chopped

Method

  1. 2. Roughly Chop Lemongrass, Chilli, Ginger, Scallion, Coriander Stalks And Curry Paste And Place In Blender With The Egg, Fish Sauce And Sherry And Blend
  2. 3. Add To The Salmon And Breadcrumbs
  3. 4. Add Chopped Coriander Leaves
  4. 5. Mix Well And Make Into 4 Cakes Or Smaller Ones If Using For Starter
  5. 6. Fry For Approx 2 Mins On Each Side.
