Ingredients
- 1 Tin John West Wild Salmon, Minus Skin, Bones, Etc
- Breadcrumbs From 1 Slice Bread
- 1 Lemongrass Stalk,
- Inner 1 Red Chilli
- 1” Piece Fresh Ginger
- 1 Scallion
- 6 Coriander Stalks
- 1 Level Teaspoon Red Curry Paste
- 1 Teaspoon Nam Pla (Fish Sauce) Use Light Soy As Substitute
- 1 Teaspoon Mirin Or Sherry (Use Tsp Sugar As Substitute)
- 1 Egg Small Bunch Coriander Leaves, Finely Chopped
Method
- 2. Roughly Chop Lemongrass, Chilli, Ginger, Scallion, Coriander Stalks And Curry Paste And Place In Blender With The Egg, Fish Sauce And Sherry And Blend
- 3. Add To The Salmon And Breadcrumbs
- 4. Add Chopped Coriander Leaves
- 5. Mix Well And Make Into 4 Cakes Or Smaller Ones If Using For Starter
- 6. Fry For Approx 2 Mins On Each Side.
