Ingredients

  • 700g stewing pieces (lamb or beef) 
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 or 2 large onion, peeled and finely chopped
  • 2 cloves garlic, chopped
  • 120ml cup water
  • 950ml beef stock
  • chopped carrots - 4/5 carrots,
  • 5 med to large potatoes, peeled,and quartered.
  • 1 teaspoon dried thyme, whole
  • 1 bay leaf
  • chopped parsley

Method

  1.     *  Brown the meat in a pan first
  2.     * Transfer the browned meat to a casserole dish
  3.     * Add the potatoes, carrots, onions, seasoning and herbs and stock mix.
  4.     * Cover with water.
  5.     * Cover and simmer for 1-1/2 hours, or until tender.

Why not make up a large quantity of this marinade in advance – it is wonderful with cutlets and would also work well with leg steaks or loin chops. The longer you marinate the meat for, the better the flavour!
