Ingredients
- 700g stewing pieces (lamb or beef)
- 1 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 or 2 large onion, peeled and finely chopped
- 2 cloves garlic, chopped
- 120ml cup water
- 950ml beef stock
- chopped carrots - 4/5 carrots,
- 5 med to large potatoes, peeled,and quartered.
- 1 teaspoon dried thyme, whole
- 1 bay leaf
- chopped parsley
Method
- * Brown the meat in a pan first
- * Transfer the browned meat to a casserole dish
- * Add the potatoes, carrots, onions, seasoning and herbs and stock mix.
- * Cover with water.
- * Cover and simmer for 1-1/2 hours, or until tender.
