Apple Pudding

Warm and Delicious with whipped or ice cream

Ingredients

  • 125g sugar
  • 1tbs water
  • 125g soft butter
  • 125g caster sugar
  • 2 eggs, beaten
  • 1/2 tsp vanilla extract
  • 125g self raising flour

Method

  1. Preheat oven to 180C, place applews, sugar and water in small saucepan on low heat and cook for 10 minutes with the lid on, stirring occasionally until apples are soft and pour into a shallow pie dish or 8 individual ramekins
  2. in a bowl, beat the butter, add sugar and beat again, add eggs, and vanilla and beat again. Gradually add in flour beating continuously. Pour mix over apples and bake for 40-50 minutes until skewer inserted in middle comes out clean.
  3. Garnish with fresh apple slices or  ice or whipped cream.
