Ingredients

Method

  1. Preheat oven to 170C
  2. Add all cake ingredients accept milk to food processor or blender and blitz until smooth. Then slowly add in milk while pulsing till the batter is smooth and creamy.
  3. Grease or butter 2, 21cm sandwich tins and pour half of the mixture into each tin and bake for 25 minutes or untill the cake starts to pull away form the side of the tin and a skewer inserted into the centre of the cake comes out clean.
  4. Cool in tins for 10 minutes then turn out on a wire rack to cool fully.
  5. When you are ready to eat the cake, place 1 on your serving plate right way up and spread jam evenly across the cake and scatter fruit on top of the jam. Whip the cream until thickened but still soft and spread over jam and fruit.
  6. Sit other cake on top and sieve or sprinkle caster sugar over top and serve. (can also be topped with icing of your choice)
