Chocolate Almond Cake

Ingredients
- 170g Butter, at room temp.
- 170g sugar
- 3 large eggs
- 170g Ground almonds
Method
- Pre-heat oven to 170C (155C for fan ovens)
- Place chocolate in a heat proof bowl and melt slowly over a saucepan of barely simmering water or in the microwave
- Cream the butter and sugar together
- Beat the eggs and gradually add them to the butter mixture, beating well between each addition. Fold in the almonds followed by the melted chocolate.
- Pour into the cake tin and bake for about 40 minutes. Cake is done when moist crumbs stick to a skewer in the centre of the cake.
- Allow to cool for 5 minutes before turning out on a rack to cool fully.
- When fully cooled, dust with icing sugar and serve.
