Ingredients
- 12 flour tortillas
- 2 tbsp butter
- 8 oz cream cheese (softened)
- 1 Large can sweet kernel corn (drained)
- 900g cooked crabmeat
- 75g fresh cilantro (chopped)
- 1 large onion (chopped)
- 1 jar pimientos (drained & diced)
- 1 tsp black pepper
- 2/3 tsp cayenne pepper
- Garnish with chopped cilantro leaves, chopped tomato and sour cream
Method
- Fold in the crabmeat
- Spread crabmeat mixture over each tortilla
- Fold tortilla in half, pressing lightly
- Brush both sides of each tortilla with Butter
- Cook 3 tortillas at a time in a skillet over medium-high heat for 5 mins
- Turn once, cook till light brown
- Garnish with sour cream and/or cilantro
