Ingredients
- 1 small onion, peeled and chopped
- 1 clove garlic, crushed
- 1 teaspoon grated ginger
- 50g celery, diced
- 1 teaspoon ground coriander
- 1/2 teaspoon cumin
- 1/2 teaspoon garam masala
- 200g washed puy lentils
- 300ml stock
- 100ml passata
- 2 tomatoes, chopped
- 1 tablespoon half fat sour cream
Method
- Add the onion, garlic, ginger and celery and cook for 5 minutes.
- Add the spices and cook for 30 seconds.
- Add the lentils, stock, passata and simmer for 20 minutes.
- Add the tomatoes, check the seasoning and add the sour cream. Serve hot or cold.
