Potato Gnocchi in a tomato, olive, anchovy and caper sauce.

- Heat the oil in a pan, add the onion,garlic, and chili and cook gently for4-5 mins. Add the anchovies, tomatoes,oregano and capers and simmer for10 mins until the sauce is thick and pulpy.
- Meanwhile bring a large pan of saltedwater to the boil, add the gnocchi andcook for 2-3 mins or until they rise to thesurface, drain and return to the pan.
- Add the sauce, olives and parsley andtoss together.
- Serve with freshly grated Parmesancheese if wished.
