Gently fried mushrooms with garlic, olive oil and parsley.

- Heat 6 tbsp of the oil in a very large frying pan, addthe garlic and cook for 10 seconds. Increase theheat, then add the mushrooms, turn them quickly inthe oil then cook for 5-6 mins until tender.
- Lift from the pan with a slotted spoon into a dish.
- Boil the liquid from the mushrooms until reducedto about 2 tablespoons, then add theremaining oil and seasoning, pourover the mushrooms and leave to cool.
- Serve at room temperature scatteredwith the parsley.
