Ingredients

Method

  1. Heat 4 tbsp of the oil in a large pan, add all the choppedvegetables and cook over a medium heat for 10 mins to soften.Pour in the stock, add tomato puree and half of the beans, bringto simmer and cook 2 mins, then add the rice.
  2. Cover and simmer for 15 mins or until the rice is tender. Mash theremaining beans then add to the soup, season if needed and stirwell until hot.
  3. Add parsley then serve each portion with a drizzle of theremaining olive oil. Serve immediately as this soup becomes verythick if left to stand.
