Riso e Fagoli
A thick rice, bean and vegetable soup.

- Heat 4 tbsp of the oil in a large pan, add all the choppedvegetables and cook over a medium heat for 10 mins to soften.Pour in the stock, add tomato puree and half of the beans, bringto simmer and cook 2 mins, then add the rice.
- Cover and simmer for 15 mins or until the rice is tender. Mash theremaining beans then add to the soup, season if needed and stirwell until hot.
- Add parsley then serve each portion with a drizzle of theremaining olive oil. Serve immediately as this soup becomes verythick if left to stand.
