A delicious and simple meal or accompaniment from Fillippo Berio.

- For the base:
- 4 large baking potatoes
- Filippo Berio Gusto Fruttato Extra Virgin
- Olive Oil
- Sea salt
- Preheat the oven to 200oC (fan 180oC/400oF) or Gas Mark 6. Prick the potato skins all over with a fork. Rub plenty of oil over the skins then rub in a little sea salt. Bake on a baking tray for 1 hour to 1hr 10mins or until the flesh is tender.
- Cut a cross in the top of each potato and use a fork to fluff up the potato. Add a good drizzle of oil and fluff up again. Serve immediately with plenty of freshly ground black pepper.
