Beef Mince and Potato Bake
Beef Mince & Potato Bake made easy!

- 1dsp tomato purée
- 1 tin chopped tomatoes
- 125ml beef stock
- salt and pepper
- Boil the potatoes in salted water until tender. Drain and leave to cool. Preheat the oven to 180°C/gas mark4.
- Heat the oil in a saucepan and fry the onion until soft. Add the mince and fry until browned. Add the tomato purée, chopped tomatoes and beef stock and bring to the boil. Simmer for 10-15 minutes and season with salt and pepper.
- Cut the potatoes into thin slices. Spoon a layer of mince into an ovenproof dish. Arrange a layer of potatoes on top and cover with a layer of mince. Repeat until everything is used and end with a layer of potato.
- Sprinkle grated cheese on top and bake for 30 minutes until golden brown. Serve with salad.
