Bucatini all’Amatticiana

A great favorite with all Romans. Bucatini all'Amatriciana is a pasta dish that comes from the town of Amatrice In Lazio.

Ingredients

  • For the sauce:
  • 4 tbsp Italian extra virgin olive oil
  • 1 small onion, finely chopped
  • 110g gugnciale (cured pork cheeks) or pancetta, diced
  • 2 tbsp balsamic vinegar or wine vinegar
  • 700ml organic pasata or 2 tins (average size) cherry tomatoes
  • salt, to taste
  • For the pasta:
  • 400g Bucatini pasta
  • 2 litres boiling water
  • 20g salt
  • 50g pecorino cheese, finely grated
  • 50g parmesan cheese, finely grated

Method

  1. Add the pasta to the boiling salted water and stir gently to ensure that all of the pasta is covered by water. Continue to stir every few minutes to prevent it sticking together. The pasta is cooked according to the cooking time indicated on the packet but remember that one minute less is always better than one minute more! Drain the pasta and put it into a serving bowl. Add the two grated cheeses and stir so that all the Pasta becomes coated in cheese. Add the sauce, mix gently and serve immediately. Buon appetito!
