Ingredients

  • 225g/8oz pitted green or black olives or mix of both
  • 3 whole peeled cloves garlic
  • 30ml/2tbsp chopped fresh oregano or 10ml/2tsp dried
  • Zest and juice 1 lemon

Method

  1. Mix all the ingredients together in a large bowl.
  2. Cover and leave to marinate for at least 4 hours before serving.
  3. These olives will keep in the fridge for 2-3 weeks.
  4. The flavours will improve even more after a few days.
