Provençal olives

Ingredients
- 225g/8oz pitted green or black olives or mix of both
- 3 whole peeled cloves garlic
- 30ml/2tbsp chopped fresh oregano or 10ml/2tsp dried
- Zest and juice 1 lemon
Method
- Mix all the ingredients together in a large bowl.
- Cover and leave to marinate for at least 4 hours before serving.
- These olives will keep in the fridge for 2-3 weeks.
- The flavours will improve even more after a few days.
