Bespoke Chocolate Brownies

Ingredients

  • 90g plain flour?
  • 150g icing sugar?
  • 20g cocoa powder?
  • 150g dark chocolate minimum 70% proof?
  • 90g butter melted?
  • 2 tbsp golden syrup?
  • 2 eggs

Method

  1. Preheat the oven to 180C/350F/Gas 4.   Grease a 25cm/10in square baking tin.
  2. 1.    Stir the dry ingredients together in a large bowl.
  3. 2.    Melt the chocolate carefully in a bain-marie or in a bowl over a pan of gently simmering water.
  4. 3.     Add the butter and the golden syrup and stir until blended. Leave to cool to a little, then stir in the eggs.
  5. 4.    Fold in the dry ingredients and stir rather quickly until smooth.
  6. 5.     Pour the mixture into the tin.  Bake in the preheated oven for 20 - 25 minutes. The top and edges will be crusty. The inside will be slightly gooey but not runny.
  7. 6.    Remove from the oven and leave to cool in the tin.
