Burgers with Avocado Salsa

Ingredients

  • 1 clove of garlic, finely chopped
  • 1 onion, finely chopped
  • 25g breadcrumbs
  • 2 tsp herbs, chopped
  • 5ml tomato paste
  • 1 large egg
  • Salt and pepper
  • Olive oil
  • 6 Sesame buns or bagels, toasted
  • To make Salsa :
  • 60g fresh ripe tomatoes, peeled
  • 1 small avocado, diced
  • 1 small onion, peeled
  • 1 mild chilli, deseeded
  • Small bunch coriander, chopped
  • Lime juice to taste
  • 1 tbsp water
  • Salad leaves

Method

  1. Mould the mixture into 6 burger patty shapes about 5cm or to fit the size of the bun or bagel that you will be serving.
  2. Brush with the olive oil. Place on a medium heat BBQ to cook. To prepare the Salsa, peel the tomatoes, gently make a cross shape incision on the rounded end of the tomato and blanch in boiling water until the skin can be easily removed.Chop the tomatoes and onion into a small, even dice.Dice the avocado. Chop the chilli and combine all the ingredients together.Test for seasoning.
  3. To assemble, place salad leaves on the base of the toasted bun, add the patty and spoon the salsa on top ending with another half of the bun.
