Toscana arose from the work of PJ and Dee Butuci. In 2002, the two renovated a farmhouse in Wicklow in order to grow their own ingredients, and soon after opened one of the first Farm to Table restaurants in Dublin; Toscana. PJ is a firm believer in using natural, home grown produce in every dish on the menu.
PJ is a fan of seasonal menus and the transient nature of that in the restaurant scene, and has implemented this in Toscana. All of the dishes on the menu are tailored to the seasonal produce he and his wife grow. As both chef and owner, Toscana is incredibly close to PJ’s heart and as such, the restaurant only offers the highest quality Italian cuisine.
Worked in Windsor Castle in London, and other restaurants there before opening Toscana.
